4 Bean Salad

This salad is great as a snack, but also as a meal if you add some bread. Beans are a great source of protein when meat is not available.

Serves 4 – 6

  • 1 can green beans (drained)
  • 1 can kidney beans (drained and rinsed)
  • 1 can garbanzo beans (drained and rinsed)
  • 1 can peas (drained)
  • 1 can black beans (drained and rinsed)
  • 1 cup sugar (or less to taste)
  • 1 cup vinegar (more or less to taste)
  • 1 onion diced
  • 1 green pepper diced
  • Salt and Pepper to taste

Mix everything together except the sugar and vinegar.  In a separate bowl, mix the sugar into the vinegar until it is dissolved. Add the sugar and vinegar mixture to the bean mixture. Add salt and pepper to taste. Let sit at room temperature or in the refrigerator for several hours, this always tastes better the next day. [/gn_box]
