BBQ Chicken

This is a very quick and easy meal for those days when you don’t have time to cook. Chicken thighs are a great alternative to chicken breast, which can be double the price. Thighs are just as easy to cook as chicken breast and actually has more flavor.

  • One bottle BBQ sauce (any of your favorite brands)
  • 2 onions sliced in rings
  • 2 lbs boneless chicken thighs
  • Salt and Pepper to taste

Put all ingredients into a slow cooker or in a large Dutch oven.  If using a slow cooker, set to low and let the ingredients cook for 4 – 6 hours or until tender.  If using a Dutch oven bring all ingredients to a simmer and then cover and turn to low for 2 -3 hours until meat is tender and cooked through and the onions are transparent.  Serve in buns or over rice or pasta.  Served with a tossed salad this makes a complete meal.
