Black Beans and Rice

This is a hearty meal that has only a few ingredients but is amazingly well balanced.  The beans add protein and the rice is a great complex carbohydrate that adds protein with very little fat.  A great vegetarian dish.

Serves 4

  • 1 onion diced
  • 1 green pepper diced
  • 2 cans black beans (not drained)
  • 1 tsp. oil or butter
  • 1/2 tsp cumin or chili powder
  • 2 cups cooked rice [/gn_box]

Sauté the onion and green pepper in the oil or butter until softened and the onion has turned a bit brown and caramelized.  Add the black beans and spices and cook on medium low for an additional 5 – 10 minutes until the liquid is almost evaporated; season with salt and pepper as needed at the end.  Serve over warm rice.

NOTE:  This is a versatile dish and you can change the spices to suit your taste.  You can use Moroccan spices, Indian curry, or Mexican Blend. [/gn_box]
