Chicken Fried Ribs and Mustard Sauce

Fried Ribs might sound a little nutty but these are tender, very flavorful and low in fat.

For the ribs:

  • 6 cups vegetable oil
  • 2 racks baby back ribs, cut into ribs
  • 1/3 cup flour
  • 3 eggs, lightly beaten
  • 2 cups panko (Japanese bread crumbs)
  • Salt and Pepper to taste

For the sauce:

  • 1/2 cup sour cream
  • 2 tbls spicy mustard

Heat 3/4 inch oil to 325 degrees in a deep skillet or pot over medium heat.

Meanwhile, season ribs with salt and pepper.  Put flour, eggs and bread crumbs in 3 separate shallow bowls.  Dredge the ribs in flour, then egg, finally panko.  Fry in small batches, turning the ribs once, until golden brown and cooked through, 7 to 8 minutes per batch.  For the sauce: stir together the ingredients and chill under ready to serve.
