Classic Creamed Spinach

This is a very healthy recipe that is also super easy.

Serves 4-6

  • 3 tablespoon unsalted butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cup whole milk, room temperature
  • 1/2 teaspoon grated nutmeg
  • 2 pounds spinach
  • 1 egg plus 2 yolks
  • Juice of one lemon
  • Kosher salt and pepper to taste[/gn_box]

Melt the butter in a saucepan over medium heat. Whisk in the flour until smooth, cook for about one minute. Add milk, 2 teaspoon salt and nutmeg. Bring to a boil, whisking. Remove from heat and allow to cool slightly. Heat a deep skillet over medium heat.  Add spinach and 1 teaspoon salt. Cover and let the spinach cook down for a few minutes. Remove cover and stir until completely wilted.  Remove from heat, drain well and chop coarsely. Gently reheat sauce, then whisk in the eggs; cook, stirring, until the sauce thickens. Stir in spinach, heat through, add lemon juice and adjust seasoning.[/gn_box]
