Dressed up Mashed Potatoes

Although these are made with instant mashed potatoes, if you don’t tell anyone, they won’t know!

Serves 4

  • 1 Box instant mashed potatoes (plain or garlic work best)
  • Milk – follow amount called for on the box
  • Water – follow amount called for on the box
  • 1/2 onion – diced (1/2 cup)
  • 1 cup mushrooms – sliced (measure the one cup after the mushrooms are sliced)
  • 1 clove garlic – minced
  • 3 tbsp butter
  • 3 tbsp oil
  • Salt and Pepper to taste[/gn_box]

Start in a large sauce pan the oil and butter over medium heat. Once the butter is melted, add the onion, garlic and mushrooms and sauté about 10 minutes until the vegetables are tender. In the same pan, add the water and milk called for on the box, bring to a boil and add the instant mashed potatoes and immediately remove from the heat. Mix the vegetables and mashed potatoes together well, cover and let sit for 5 -7 minutes until all of the liquid has been absorbed. Mix well again and season with salt and pepper before serving. [/gn_box]
