Easy Baked Chicken and Rice

This is a great one-dish recipe that is simple and easy to prepare as well as low in fat and high in protein.

  • 1 can cream of chicken soup (any cream soup like mushroom, celery) will work
  • 1 cup water
  • 3/4 cup uncooked rice
  • 1/4 tsp paprika
  • 1/4 tsp pepper
  • 1 lb chicken (breast, thighs, or legs all work well)
  • 1 can mixed vegetables – drained

Preheat the oven to 375.

In a baking dish mix the soup, water, spices and rice together.  Dump the vegetables over the rice.  Season the chicken pieces with salt and pepper and place the chicken on top of the vegetables.  Cover the dish tightly with foil and place in the oven for 45 – 60 minutes until the chicken is cooked through and no longer pink. [/gn_box]
