Italian Meat Sauce

This sauce can be served over pasta or as the meat sauce in lasagna. It also freezes great for those nights when you only have time to boil pasta and add a little sauce.

  • 1 pound ground meat (any kind will work but turkey is low fat with great flavor)
  • 1 large onion – diced
  • 2 ribs celery – diced (about ½ cup)
  • 2 carrots – diced (about ½ cup)(optional)
  • 1 can mushrooms or 12 fresh – sliced (any kind will work)(optional)
  • 2 cloves garlic or ½ tablespoon minced
  • 2 cans diced or stewed tomatoes not drained (use the already seasoned ones if possible)
  • 1 can tomato paste
  • 1 tbls Italian seasoning
  • Salt and Pepper to taste

Sauté the onion and garlic until tender, about 4 minutes.  Add the meat and cook until the meat is no longer pink then add the celery, carrots, mushrooms and Italian seasoning and continue to cook over medium heat for 10 minutes.  Add the diced tomatoes and tomato paste, season with salt and pepper and cook for an additional 15 minutes.  Serve over pasta or use as the meat sauce for lasagna.
