Lasagna

Lasagna

This is an easy and fun recipe for the kids to help with. Feel free to use an Italian meat sauce in place of the jar sauce. Also, if you don’t like red sauce, you can use Alfredo or vodka sauce.

  • 1 box lasagna noodles – cooked for half of the package time
  • 2 jars prepared pasta sauce – about 4 cups (any flavor your family likes)
  • 8 oz Ricotta cheese (skim or whole milk will work)
  • 8 oz Cottage cheese (large or small curd, skim or whole milk)
  • 8 oz parmesan cheese – shredded
  • 2 eggs
  • 2 teaspoons salt
  • 1 teaspoon pepper[/gn_box]

  1. In a large mixing bowl, mix the ricotta, cottage cheese, half of the parmesan cheese, the eggs, salt and pepper together until well blended. 
  2. Place 1 cup of pasta sauce in the bottom of a 9×13 baking dish (most any baking dish will work if you don’t have 9×13). 
  3. Place enough noodles on top of the sauce to completely cover it. 
  4. Put 1/4 of the cheese mixture on top of the noodles and spread evenly.  Continue to layer sauce, noodles, cheese until the final layer. You should have sauce as your final top layer, on top of this place the reserved parmesan cheese. 
  5. Cover with foil and place into a 350 degree over for 45 minutes. 
  6. Remove the foil after 45 minutes and cook for an additional 10 minutes. 
  7. Let stand 10 minutes before you slice and serve.[/gn_box]
