Oatmeal Granola

Granola is a very healthy and filling breakfast or snack but the price can be a problem. This recipe is easy, quick and inexpensive. Oh, and tastes great too!

Serves 8-10

  • 1 cup whole wheat flour
  • 3 cups rolled oats (not quick or instant oatmeal)
  • 1/2 cup coconut – shredded (you can use sweetened or unsweetened, look for it in the freezer section)
  • 1/2 cup wheat germ (optional)
  • 1/4 cup water
  • 1/2 cup oil
  • 1/2 cup honey (or brown sugar or maple syrup or any combination of the three)
  • 1 tsp vanilla
  • 1/2 Tbsp salt [/gn_box]

Pre heat oven to 250 degrees.

Combine flour, oats, coconut, and wheat germ in bowl and mix.  Blend water, oil, honey, vanilla and salt in separate bowl.  (If using brown sugar, heat the water and dissolve the brown sugar first) Add wet to dry ingredients and mix well. Spread out on cookie sheets and bake for 55 minutes.  I find that it may need to cook a bit longer and is good if you let it get golden brown. [/gn_box]
